What Mixes Do You Make?

Erin has been busy making various mixes to make her life easier.

I modified Alton Brown's Hot Cocoa Mix recipe and make it up for us in winter:

Yield:
5 1/2 cups dry mix

Ingredients

2 cups powdered sugar
1 cup cocoa
2 1/2 cups powdered milk
1 teaspoon salt

Heat water in the mug in the microwave. Add 1/3 cup of mix -- more if you like -- to your mug, stir well, enjoy.

This also makes a great mocha coffee by using hot coffee instead of hot water.

Cinnamon is a great addition to this, if you like Mexican-style hot chocolate.

Snack cake mix (very old recipe from Woman's Day magazine)
6 C flour
4 C sugar
3 TB baking powder
2 tsp salt
1.5 C shortening
Combine all and use pastry blender to cut in the shortening until mixture resembles cornmeal. Store in airtight container. Makes 13 C

To use in everyday cake:
2 C snack cake mix
1 egg, slightly beaten
1 tsp vanilla
1/2 C milk
stir all together and bake in greased 8" pan 375 degrees 30 minutes or until done. makes 1 layer.
There were many variations and add-ins (raisins, walnuts, chocolate) but I like the plain cake fine. I have also microwaved this cake for a really fast snack.

The only mix I make is trail mix:

pecans, walnuts (use whatever you like) no salt
sunflower seeds, no salt and or pumpkin seeds
dark chocolate chips, mini are best
raisins and or craisins
some peanuts if you like them

I usually will make a quart jar and leave it on the counter for me and dh. It does not last long! basically you can add whatever you like. I love dried mango and pineapple but dh does not due to the diabetes situation. so I may add that to mine rather than the raisins or craisans.

It is not cheaper than what you buy in the store but we like it and it is probably slightly healthier. cj
