Apple Pie Muffins Recipe

These apple pie muffins taste as good as they look, and with only four ingredients, they couldn’t be easier to make.

What’s the secret? Applesauce. It completely eliminates the need for eggs, milk and oil, so these muffins come together quickly, and bonus: they’re low-fat, too!

Just keep four ingredients in your pantry, and you’ll be able to make a batch any time a craving hits.

Ingredients

Tools You’ll Need:

Round up these basic kitchen tools before you start, and you’ll have everything you need to make a batch of apple pie muffins.

  • A large mixing bowl
  • A muffin pan
  • Measuring cups and measuring spoons
  • A rubber spatula
  • A stirring spoon
  • Cooking spray or cupcake wrappers

Recipe Notes:

Spice Cake Mix

While you can absolutely use store-bought cake mix and apple pie filling in this recipe, I like to make my own, when I have the time. If you decide to use my homemade spice cake mix recipe in your muffins, consider swapping the pumpkin pie spice called for with apple pie spice, to amp up the apple pie fragrance and flavor. Here’s my recipe for apple pie spice.

Apple Pie Filling

It only takes about 15 minutes to make a batch of apple pie filling from start to finish, and it freezes beautifully. I like to make several batches when apples are in season, so I always have some on hand for recipes.

What You Do:

Preheat the oven to 350 degrees F.

Apple Pie Muffin Batter

In a large mixing bowl, combine the spice cake mix, applesauce and vanilla. Stir, until all the ingredients are combined and you have a thick batter.

Add Apple Pie Filling to Tops of Muffins

Spray a muffin pan with cooking spray, or line the cups with cupcake wrappers. Then, fill the cups three-quarters-full with batter, and top each muffin with a couple apples from your pie filling.

Apple Pie Muffins Cooling

Bake your apple pie muffins for 20-25 minutes, or until a toothpick inserted in the center of the muffins comes out clean.

Since these muffins contain apple pie filling and applesauce, I recommend storing any leftovers in the refrigerator.

In a large mixing bowl, combine the spice cake mix, applesauce and vanilla extract. Stir, until you have a thick batter.

Spray a muffin pan with cooking spray, or line the cups with cupcake wrappers.

Fill the cups three-quarters-full with batter. Then, spoon a couple pie filling apples onto the top of each muffin.

Bake for 25 to 30 minutes, or until a toothpick inserted in the center of the muffins comes out clean.

Store leftovers in the refrigerator.
