Bread Machine Chocolate Zucchini Bread

This bread machine chocolate zucchini bread is so good, it’ll have you wishing you had more zucchini. It’s incredibly moist, and gets a double dose of chocolate from the cocoa powder and chocolate chips. Just spend a few minutes preparing the ingredients, and let your bread machine take it from there.

The recipe calls for 2 cups of shredded zucchini. I like to use my food processor to quickly shred it, but a box grater will also do the job.
You don’t need to peel the zucchini, or worry about squeezing excess water out of the shreds. All of that water is going to make your bread machine chocolate bread super moist.
I recommend using mini chocolate chips in this recipe because they won’t sink to the bottom of the loaf, like regular chocolate chips.

Add the wet ingredients to your bread machine, including the shredded zucchini.

In a large mixing bowl, whisk together the dry ingredients.

Then, add them to your bread machine.
Select the setting for non-yeasted breads. On my Zojirushi, it’s the “cake” setting, but it may be called something different on your machine.
If you aren’t sure which setting to choose, consult the owner’s manual that came with your machine, or refer to this handy chart that I made.

Some bread machines also allow you to select the crust color. If your machine has a crust setting, and lets you make a selection, when making non-yeasted breads, choose the “light” option.
Then, hit “start.”

After the bread machine is done mixing the batter for your chocolate zucchini bread, an “add” beep will go off. When you hear it, open the machine, and use a rubber spatula to mix in any dry ingredients that are stuck to the side of the bread pan. Then, add the chocolate chips; close the lid; and hit, “start” to resume mixing.

Tip
- Some bread machines have a handy little auto-add dispenser that will add your nuts or other mix-ins when it’s time. If your machine has this feature, go ahead and fill the dispenser with the chocolate chips, when you’re loading the rest of the ingredients.
Once the bread finishes baking, remove the bread pan from the machine, and allow it to cool for 10 minutes.

Then, turn your chocolate zucchini bread out on a plate, or cooling rack, to finish cooling, and slice.

Ingredients
- 1/2 cup cooking oil
- 3 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups zucchini, shredded (about 2 medium)
- 2 cups all-purpose flour, spooned and leveled
- 1/2 cup brown sugar, packed
- 1/2 cup unsweetened cocoa powder, spooned and leveled
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon table salt
- 1/2 cup mini chocolate chips
Instructions

When the “add” beep goes off, open the lid, and use a rubber spatula to mix in any flour on the sides of the pan. Then, add the chocolate chips, and press “start” to resume mixing.
When the bake time is up, carefully remove the bread pan, and allow it to cool on the counter for 10 minutes.
Then, carefully turn your chocolate zucchini bread out on a pan or cooling rack.
Cool completely; then, slice.
