Bread Machine Pumpkin Bread

This bread machine pumpkin bread is moist and flavorful, and smells amazing while it’s baking. Add nuts or chocolate chips to make pumpkin nut bread or pumpkin chocolate chip bread.

Bread Machine Pumpkin Bread Recipe
Ingredients:
- 3 large eggs, beaten
- 1 cup pumpkin puree (how to make your own pumpkin puree)
- 1/2 cup (1 stick) butter, melted (and cooled slightly)
- 1 teaspoon vanilla extract (how to make vanilla extract)
- 2 cups all-purpose flour
- 3/4 cup brown sugar (light or dark)
- 1 tablespoon baking powder (how to make baking powder)
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice (my pumpkin pie spice recipe)
- 1/2 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
What You Do:

Add the ingredients in the order recommended by the manufacturer of your bread machine, or follow the order they’re listed in the ingredient list. Loading the wet ingredients, followed by the dry ingredients will ensure you don’t end up with unmixed flour at the bottom of the bread pan.
If you decided to include chopped nuts or chocolate chips, you can add them now, or wait and add them after the first mix, when the “add” beep sounds.
To set your bread machine, consult the manual, and select the setting for non-yeasted breads. This setting is called different things on different bread machines. On my Zojirushi, the “cake” setting is the one to use. Non-yeasted breads (i.e. breads/cakes that use baking powder and/or baking soda to give the bread/cake lift) do not require rise time, but they do require longer bake times than yeasted breads. Using a setting that is intended for yeasted breads will not deliver good results, so it’s important to figure out the proper setting for non-yeasted breads on your machine, and to use it for this recipe.

Some bread machines allow you to choose your crust color. If your machine has a crust setting, and allows you to make a selection for this type of bread, choose “light.”
Then, hit “start.”

When the “add” beep sounds, after the first mix, use a rubber spatula to scrape down any unmixed flour on the sides of the pan. Then, add the optional nuts, or chocolate chips, if you haven’t already.

Once the bread is finished baking, carefully remove the pan with pot holders. Allow it to cool for 10 minutes.

Then, gently turn it out onto a plate, or cooling rack, and continue cooling.

Slice, and serve.

Use the setting on your bread machine for non-yeasted breads. (Consult the manual, if you aren’t sure which one to use.)
If your bread machine has a crust setting, select “light” crust.
Hit, “start.”
After the first mix cycle completes, use a rubber spatula to scrape any flour off the sides of the pan. Add your optional nuts or chocolate chips, if you didn’t add them earlier.
Once your pumpkin bread has finished baking, carefully remove the pan with pot holders.
Let cool for 10 minutes. Then, gently turn your pumpkin bread out onto a plate. Allow it to finish cooling; then, slice and enjoy.

This is delicious! What do you recommend for using up leftover pumpkin bread?
Ha! With two teenagers and a husband in the house I’m not familiar with this concept of leftover pumpkin bread you speak of 🙂 That said, it freezes beautifully, so one option is to slice the loaf, and then wrap part of it and stick it in the freezer. This will allow you to pull out as many or as few slices whenever you want.
