Crockpot Baked Potatoes

The best dinners are the ones that make themselves. Throw some potatoes in the crockpot in the morning, and you’ll have baked potatoes waiting for you when you get home. Here’s the recipe.

Potatoes (regular or sweet)

What You Do:

Poke Potatoes with a Fork

Scrub your potatoes. Then, poke them several times with a fork, so the steam has a place to escape as they cook. I used russet potatoes this time, but you can also do sweet potatoes this way.

Transfer Potatoes to Crockpot

Load the potatoes into your crockpot. You can do as many as will fit. Then, put the lid on, and cook them on low for eight hours.

Baked Potato with Toppings

Enjoy your baked potatoes topped with butter, sour cream, bacon, fresh veggies, cheese, chili or any combination of the above. The leftovers work well in lunchboxes, so I always make extra.

Need to feed a crowd? Fill several crockpots with potatoes, or fill an electric turkey roaster instead.

  1. Love this idea – will have to try it. But we are only two in our house. I have a mini crockpot I think I’ll try it on one weekend soon.

    1. Ooh … good idea. I’ve never done oven fries in the crockpot. I may have to play with that. It’s one of our favorite uses for potatoes. My in-laws brought us a giant sweet potato last week. It didn’t last past dinner time. Sweet potato oven fries are the best.
