There may be a bit of cheating around the holidays when I make pumpkin pie or pumpkin pie pudding. Not sure how you would make it without canned evaporated milk. I have found it difficult due to so many gluten free things are high glycemic. I do use a lot of recipe from Keto books and low carb that use almond and coconut flour which helps but cooking from scratch is a lot of work. Good luck.
