Easy cobbler

Today I made a very easy blackberry cobbler. I used a 7x11 baking dish, but you could also use the larger 9x13 ("brownie") pan. The recipe is easy to remember because except for the fruit the amount of each ingredient is 1. I call it my 1:1:1 cobbler recipe.

fruit, fresh or frozen - 2-6 cups
1 c flour
1 c sugar
1 c milk
1 egg (optional)
1 tsp baking powder (optional)
1 tsp vanilla or almond extract (optional)
1 tsp cinnamon or nutmeg or allspice (optional)
butter or oil or shortening

Lightly grease the bottom & sides of your baking dish. Pour in fruit. Make a batter from flour, sugar, and milk. Add any of the optional ingredients to the batter. Pour over the fruit. Bake at 350* F for about 35 minutes until well browned.

If you sugar your fruit, you will probably want to reduce the amount of sugar in the batter. Likewise, if your fruit has a lot of juice, you can reduce the amount of milk. Today's cobbler used 2 packages of blackberries (6 oz each).
