Almond Flour blueberry muffins

Almond Flour blueberry muffins

Preheat oven to 325 F
200 grams (2 cups ) fine almond flour. I measured mine by gram weight and it did make a difference compared to using a measuring cup. I use almond flour from Bob's Red Mill or Oh Nut's both are on line. It does not say fine but it really is fine in my opinion.
1/2 tsp baking soda
1/8 tsp fine sea salt
3 eggs
1/4 c honey
2 tablespoons of ghee or coconut oil melted. I used coconut oil
1 tablespoon of lemon juice
1 teaspoon of vanilla extract
1 cup blueberries.

Grease or line muffin tins with cupcake papers. I prefer to grease the tin since I tend to see too much of the cooked muffin stick to the cupcake liners.

1. Combine all dry ingredients in a bowl. Stir to blend.

2. Combine all wet ingredients and then stir in to dry ingredients.

3. Use large scoop and fill muffin cups 3/4. Bake 20 to 25 min or until golden brown. Check with a toothpick in the center until it comes out dry.

Carbs: 15 , Calories 215, fat 15, Sat fat 3. They do not rise like gluten flour muffins. Just come a little bit over the top of the muffin tin.

My second batch did not turn out as well. I think the blueberries are too big for the almond flour batter. You might want to try to use dehydrated blueberries.

I just made two dozen and they turned out fine. I use paper muffin cups and just scrape what's on the bottom.

Bev thank you for the input. I did not use paper muffin cups since other almond flour muffins I have made tend to stick to the paper liner. Good to know since it makes for easier clean up.

If I didn't use the paper cups I would have to hand wash each cup in the pan. No way am I doing that. Speaking of which I am going to eat a muffin right now.
