Old Fashioned Baked Beans

4 cups water
2 cups navy or pea beans
1 medium onion, chopped
¼ pound salt pork with rind thinly sliced (optional)
¼ cup packed brown sugar
3 tablespoons molasses
1 teaspoon salt
¼ teaspoon dry mustard
⅛ teaspoon pepper

Heat water and beans to boiling, boil 2 minutes. Remove from heat, cover and let stand an hour.

Add enough water to beans to cover, if needed. Heat to boiling, cover and simmer for 1 to 1 ½ hours until beans are cooked. Do not cook until they burst!

Add remaining ingredients and stir to completely mix. Add enough water to almost cover the beans (doesn’t matter if you add “too much”).

350 degree oven. Cover beans and cook for 3 hours stirring now and again. Uncover, beans can then be cooked until the desired consistency desired is arrived at (up to half an hour or a bit longer).

To plan night before: soak beans in 4 cups of water overnight. Next day, bring to boiling in same water 1-2 hours. Continue as directed.

I don't add the salt pork. I just make them without and they are delicious. I've tried with the pork but I just prefer without.
