Peanut Brittle from The Pillsbury Cookbook
2 cups sugar
1 cup light corn syrup
1 cup water
2 tbsp margarine or butter
2 cups peanuts
1 tsp vanilla
1 tsp baking soda
Generously butter 2 cookie sheets and set aside. In a heavy saucepan, combine sugar, syrup and water. Cook, stirring constantly until sugar dissolves. Continue cooking until candy thermometer reaches hard crack stage or 300* F, stirring occasionally. Add margarine/butter, stir in peanuts. Remove from heat, stir in vanilla and baking soda. Spread as thinly as possible on the cookie sheets. Break into pieces and store in air tight containers.
