1. Wisk together 1 cup crushed pineapple, 3 T. pineapple juice, 1 tablespoon white or cider vinegar, 2 tsp. vanilla, 2 tablespoons milk of your choice. Set aside for 10 minutes.
2. Add to above and stir just till combined - 1/2 teaspoon each of salt, baking powder, baking soda, 1/3 cup sugar, 1 cup flour.
3. Bake in greased or paper lined muffin tins at 350 for 20 minutes. These are VERY sweet - you could get away with just 1/4 cup of sugar instead of the 1/3. I would decrease the sugar next time. Recipe said you get 12 muffins - I got 11. I added about 1/3 cup dried cranberries to the batter.
