Banana Tea Bread/Muffins- Super Simple

Post by Mrscreative »

I have made this recipe since grade school. I am not sure where it came from but one of my mother’s favourites

13/4 cup flour
2 tsp. baking powder
1/4 tsp. baking sod a
1/2 tsp. salt
1/3 cup melted margarine
2/3 cup sugar (I use less)
1 cup bananas mashed (about three, very ripe ones, can use frozen ones)
2 eggs , beaten

Preheat oven to 350 degrees

Blend together the dry ingredients in a large mixing bowl. Add wet ingredients and stir just until blended together.

Pour batter into greased loaf pan or muffin tins. Bake about 50 minutes to 1 hour for the loaf, 20 minutes for the muffins.

Raisins and/or nuts can be added but will definitely make your baking a little heavier.
