Vanessa’s Lentil-Quinoa Stew

1 small onion, chopped
1 Tbsp olive oil
1 celery stalk, diced
1 carrot, diced
3 garlic cloves, minced
21/2 cups vegetable stock
1/2 cup dry red lentils
1/4 cup quinoa
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 medium tomato, diced
1/4 cup fresh cilantro, chopped
1 Tbsp apple cider vinegar

Place medium sized saucepan on medium heat. Sauté onions, then add celery, carrots and garlic. Sauté about 5 minutes. Add stock, lentils, quinoa and spices.

Bring to boil, reduce heat. Cover with lid and simmer 20 to 25 minutes until lentils are tender.

If desired blend about half the mixture and return to pot. Add tomatoes, cilantro and vinegar. Reheat and serve

Makes 2 large or 4 small servings
