I no longer buy cake mixes. On Monday, I made a snack cake from pantry supplies and we've been enjoying it. This vanilla cake was easy to make and came out great.
1 1/2 cups flour
2 tsp baking powder
1 cup sugar
1 egg
1/2 cup milk
1/2 cup sour cream (I used yogurt)
3 Tbsp vegetable oil (I used coconut oil)
1 tsp vanilla extract
Preheat oven to 350 degrees Farenheit. Combine the dry ingredients in one bowl and the wet ones in a second bowl. Combine and stir until well mixed. Pour into a greased 8x8 baking pan and bake for about 30 minutes. I let mine bake a little bit longer (I wasn't watching the clock) and it wasn't too brown at all and the testing straw came out clean -- but it did fall a little bit in the middle as it cooled.
Ice/frost or not. I had some cream cheese frosting in the fridge and I used a small amount on the top while the cake was still warm. It made a nice little glaze on top. We are eating this under freshly sliced strawberries.
