I got this recipe from my wonderful Las Vegas pen pal Rachel. Little did she know how such a simple act of sharing a recipe could have on other people’s lives. I pulled this cake out of the freezer to serve to our new Ukrainian friends and they both enjoyed second helpings!
2 cups flour
2 cups sugar ( I used 11/2 - still plenty sweet)
2 eggs
2 tsp baking soda
1/2 tsp salt
1 cup walnuts
1 tsp vanilla
1 20 oz can crushed pineapple
Combine cake ingredients, beat until smooth. Add wet ingredients (whole can pineapple, including juice and vanilla). Add walnuts last and blend them in . Bake in greased 15 x 10 inch pan. Bake at 360 for 35 minutes.
Cream Cheese Frosting
1 8 oz cream cheese, softened at room temperature
1/2 cup butter
31/2 cups powdered (icing) sugar
1 tsp vanilla
Blend until smooth. Generously frost your cake when it’s cool
Easy to Make!
Enjoy!

I am so glad you posted it! I kep thinking, "Gosh, that sounds so familiar. . ." And then it hit me!! Nori always made this cake but with canned fruit cocktail and then it was served with whipped cream or cool whip. I'm going to try both ways! It will sure bring back memories of hot summer July suppers in Luverne, Minnesota with the circadas buzzing outside and all. Thanks so much for the recipe!!
