Pot Luck Corn Dip

Disclaimer This is not a healthy recipe - but so good! The recipe is really just a guide - you can add or subtract ingredients as you like - whatever sounds good to you!

Ingredients -

* 1 bag (10 to 12 oz) frozen corn
* 1 small sweet red (or any color) pepper, finely diced
* 1 can Rotel style tomatoes, very well drained - or - 1 large tomato, chopped and 2 tablespoons canned green chili peppers.
* 1/4 cup finely diced green or black olives, optional
* 6 oz. cream cheese, cut into small chunks (or you can use any combination of cream cheese, sour cream, mayo)
* 1 1/2 cups extra sharp cheddar (or your favorite) cheese
* 1 tablespoon dried minced onion
* 1 teaspoon garlic powder
* freshly ground black pepper to taste
* 1 tablespoon butter

Directions -

* Saute the green pepper in butter until slightly softened. Add defrosted corn and heat through.
* Remove from heat, Stir in cream cheese, 1 cup of the cheddar cheese, olives, tomatoes, spices.
* Pour above mixture into a glass casserole dish. Bake at 350 for 15 to 20 minutes.
* Remove from oven, sprinkle 1/2 cup cheese over top. Broil in oven for 2 to 3 minutes until top is bubbly and starting to brown.
* Serve piping hot or warm with crackers, crusty bread, or chips. Can keep in the frige for a few days and reheat in the oven.

That sounds so good! You can never go wrong with Rotel, cheese and olives -- yum!
