11/4 cupts cooked brown rice
1/4 cup walnuts, roasted and chopped
2 TB sunflower seeds, lightly roasted
1/4 cup minced onion
1/4 cup minced celery
6 eggs, beaten (I only had 4 and it turned out fine)
1 TB Dijon mustard
1 tsp salt (would use less)
1/2 tsp pepper
1/2 tsp sage (I used fresh)
1 cup grated cheddar cheese
Preheat over to 350 degrees. In large bowl combine all of the ingredients and mix well. Put in greased loaf pan. Bake at 350 until lightly browned and pulling away from the sides a bit, 60 - 90 minutes.
It's gluten-free too!
