French Toast (using tofu)

3/4 cup soft tofu
2 Tbsp maple syrup
3/4 tsp ground cinnamon
1/2 tsp vanilla extract
1/4 tsp salt
1/4 cup apple juice or water
1 Tbsp oil
4-6 slices stale bread

In a food processor, blend the tofu, maple syrup, cinnamon, salt, apple juice and oil until smooth. In a large shallow bowl, pour batter and coat both sides. Fry bread in a non stick pan and cover. Let sit on medium heat until underside is golden and crusty. Flip toast over and cook other side until golden brown. Makes 2 large or 4 small servings.

The tofu - are you using soft 'cube floating in water in a plastic tub' soft tofu or something like Mori-nu?

It's the type floating in water - just make sure it's not dessert flavoured already. I'm not sure of the other brands you mentioned. But I have also used the shelf stable type which you don't have to keep refrigerated.
