Oat Bars Recipe
1 cup brown sugar
3 1/2 cups oats (minute or regular)
1/4 cup self-rising flour
1 cup (2 sticks) butter
1 tsp vanilla
Mix dry ingredients first, then mix in butter and vanilla. Use your hands to mix all the ingredients together. Press into a buttered 9" square pan. Bake at 350º for 15 minutes. Cool completely before cutting.
Note: You could use a wooden spoon, but the hands are the best tools to mix together.

This recipe sounds like my Mom’s Congo Bars she would make for us. I have GF oats (and can make my own self-rising flour), so I’m going to try making these.
