No-cook meals?

Anyone have any favorite vegetarian no-cook meals?

Summer = hot = why eat something hot? (Do not say this to DH, who can eat hot soup when it's 112 out and ENJOY it, whereas I see that as a form of torture)

Salads get boring after a while.

We do like the whole fresh fruit thing.

I do a tofu "chicken" salad that isn't bad, we do all sorts of salads, there's mock tuna salad, usually carrot sticks or grapes on the side (no chips for the most part). Egg salad.

I'm just about at my salad limit and its only June 19.

Ideas?

Oh. By "cook" I mean the use of heat / fire - electric or gas help.

Coleslaw works.... potato salad? All that boiling first, does not get it so much.
