Oatmeal Blueberry Muffins - Original recipe on top

bake 425º for 14 - 15 minutes

Oatmeal bread and muffins
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 teaspoon cinnamon
1 cup oatmeal (I used cook in 5 minute) But the cook in 1 minute works too.)
3 tablespoons cooking oil
1 egg beaten
1 cup milk

Mix dry ingredients; mix in oil, eggs, and milk. Bake in a well greased 8” square pan 20 minutes or lightly browned. Serve warm with butter or honey.

For muffins use greased muffin pan, non stick is best I spray with Pam

Blueberry oatmeal muffins

1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 cup oatmeal (I used cook in 5 minute) But the cook in 1 minute works too.)
3 tablespoons cooking oil
1 egg beaten
1 cup milk
1 cup blueberries

Mix dry ingredients; mix in oil, eggs, and milk as for quick bread

Pour into greased muffin cups, I use Pam, I have found that putting about 6 blueberries into each muffin cup and then pressing down with a spoon. This ensures that there about the same number of blueberries in each muffin.

Thank you itspennyc for mentioning that you have used the longer cooking oatmeal in this recipe. I am going to give it a try. My daughter during the lockdown in March, bought the large flake and I didn't like it at all in the cookies I baked with it. So I haven't tried anything else since and the package stares at me and tells me to use it every time I open the cupboard.
