Easy Chicken with Salsa

Take some boneless/skinless chicken - you can use breasts or thighs. Salt and pepper them, heavy on the pepper, and add any other seasonings you like, i.e. garlic powder, chili powder, Mrs. Dash, etc. Bake at 425 for about 20 minutes - depending on size of pieces - until chicken is not pink inside.

While chicken is baking, take one can of (drained) black beans, one can of (drained) white corn kernels, and one can of (drained) tomatoes and add them to a saucepan. I try to use either fire roasted tomatoes or a tomatoes/green pepper/onion mix. Heat these ingredients well, then add some cornstarch to thicken sauce. I usually use one teaspoon to a quarter cup of warm water - mix well - and add to pot. Stir until sauce is thickened.

Serve your chicken topped with the salsa. Bonus points if you have chopped cilantro to put on top.
