I saw this a bit late to help you, but for next time maybe you can use these ideas. For big lettuce, you can save the bug leaves for sandwich wraps or Chinese lettuce wraps which I like. You can also saute in oil with garlic and oil.Good with Chinese food. As someone else mentioned, good with fried rice-fold it in near the end so cooked but not overcooked. Add fresh green onions to this-think this is like Yang Chow fried rice. Also shredded lettuce can be combined with shredded cabbage (if you need to extend it) and you can make an Asian salad-you can add crushed Ramen too or won ton strips.

I've never used lettuce in a cooked dish before, but I like the fried rice suggestion too. The best way I've ever had lettuce was in a salad like this one (cuz you know...bacon).
