3 cups cauliflower, shredded (can use grater or food processor)
2 eggs
1 cup shredded pepperjack cheese
1/4-1/3 cup Panko breadcrumbs
salt and pepper and garlic salt to taste
can add:
1/2 red bell pepper, seeded and chopped
1 small jalapeno, seeded and chopped
1/4 cup cilantro, chopped
Preheat Oven to 375 degrees F.
Place shredded cauliflower into a colander and squeeze out the excess moisture.
Mix ingredients thoroughly. Generously grease a large cookie sheet. Form mix into small balls and place 12-16 on baking sheet.
Bake for 10 minutes on one side. Then use spatula to turn and bake 10 minutes more.

This recipe sounds good and I want to try it. Are you squishing water out of raw, grated cauliflower?
