Butternut Squash Soup

2 medium onions, chopped
4 cloves garlic, minced
2 Tbsp olive oil
1 butternut squash, peeled and diced
2 medium or 1 large sweet potatoes , peeled and diced
3 Granny Smith or tart apples, peeled and diced
1/2 to 1 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp nutmeg
1 L (about 4 cups) vegetable broth

In a large soup pot, sauté the onions and garlic in oil on medium heat until translucent. Add the broth and remaining ingredients and bring to a boil. Simmer about 30 minutes until veggies are soft. Take about three quarters of the soup and blend until smooth. Return to soup pot with the remaining chunky stuff, stir well and serve. Can garnish with sour cream and green onions or chives.

If there doesn’t seem to be enough broth, I just add in some water and a vegetable cube or concentrated boullion.

Makes about 8 generous servings

Thank you!
I am going to try your recipe, I already see big differences...mine calls for apple juice and heavy cream...although I just use milk.
Plus your herbs and spices are different. I look forward t trying this soon.
