I have a person living with me that gets a bit antsy if I leave things too long over their best by dates. I try to keep him happy whenever possible. Today I should be able to use up the potatoes (or at least most of them) and hopefully the remains of the carrots and asparagus.

Jackie, you just inspired me to make a taco salad using lentils. We are trying to work through my daughter's extensive stash of lentils - even after donating some - and have been having lentil tacos about once a week, plus I made bbq. lentils to put on top of baked potatoes.

Used up the carrots and asparagus in the fridge for our supper tonight.
Also ate some of the taco salad for lunch today. Hubby ate some of the leftover pork roast in sandwiches.
We have really cut down on wasting food over the last few years, and I am keeping better track of what needs to be used up in the pantry, fridge and freezer as well.

So since I last updated here I have used up some butternut squash, some apple pie filling, lots of salad fixings, all the carrots again, all but one kohlrabi (which I will use up at some point this week). There have been some condiments used up as well and I have pulled new bottles of mustard, worchestershire sauce, and relish from the pantry or cold room.

Since we have an abundance of dried beans and lentil, I have decided to make some red beans in the slow cooker today. They can be used throughout the week in tacos, salads, etc.
I have a can of sauerkraut that needs to be used. Going to make "Reuben" sandwiches with tofu in place of the corned beef - it's called a "tofuben" by some of my vegan friends.
