Flour and oatmeal

White, brown and powdered sugar

Cornstarch, baking powder, baking soda

Salt, pepper, and a selection of spices and extracts. If it had to be bare bones: pumpkin pie spice, cinnamon, apple pie spice, Italian seasoning mix, and vanilla extract would get me through most cooking.

Raisins, coffee, tea bags, yeast, baking cocoa, boullion cubes

Bread, crackers

Some seasonal fresh fruit

Potatoes, onions, carrots, sweet potatoes, squash, tomatoes, and sweet peppers if the budget stretches that far.

Butter (or margarine in a pinch), eggs, hard cheese, almond milk or powdered/canned dairy milk.

Peanut butter, jelly, pancake syrup

Canned fish, canned chicken

Canned beans, tomatoes, tomato sauce and paste

Pasta and noodles

Rice, lentils, popcorn

Canned fruit: mostly pumpkin, peaches and pineapple

Frozen vegetables, mostly for soup and casseroles

A small amount of meat and frozen fish

Catsup, mustard, mayo, barbecue sauce, Worchestershire sauce for cooking

Editing to add vegetable shortening because Sandi's list reminded me.

I enjoy yogurt, but could live without it.

Much of what's already been listed (but in the gluten free form) along with:

TVP
various dried beans
lentils - red, brown, green
frozen cashew pieces (used in both a vegan gravy and a vegan cheese sauce)
almonds
walnuts
pistachios
shirataki noodles
other noodles
'rice' is broken down into white, brown, wild, basmati, arborio
unsalted peanuts
Braggs liquid aminos
nutritional yeast flakes
meat alternatives (usually frozen)
tofu - extra firm and soft
frozen veggies
canned tomato sauce, diced tomatoes, tomato paste
coconut milk, canned and powdered
the usual baking stuff & yeast
vegetable shortening
sour cream
full-fat plain yogurt
alternative milks
McKay's seasonings (alternatives to 'broth' - vegan 'chicken' and 'beef' in powdered form)
Maple syrup - used to get this from a family on the east coast who came out to OK once a year, but haven't seen them since 2019 so have to buy the pint versions and boy those are expensive

I didn't put down the items I would keep in the fridge, but agree with all that everyone has posted.

I think I would add dry milk powder to my list.

I would also add shelf stable broths, packages of gravy mix (those can be added to soup to give it a bit heartier taste), hot chocolate, shortening (all vegetable), and I am sure there are others I am missing.

My must are:

Flour
Sugar
Dark Brown sugar
Oatmeal
K-Cups (my son buys those for me)
mixed nuts( store brand)
pecans
Tuna meal kit I don't use enough of any of the ingredients to buy the bulk.
chicken broth low sodium
beef broth low sodium
at least one shelf stable meal
Peanut butter

A lot of what others have listed - flour and the like. But if it came right down to it - if I only had the following items for a week or two, I would be okay - they are my "NEVER RUN OUT OF THESE ITEMS":

1. Canned tomato soup (currently have 6 four-packs, purchased on sale and using coupons and 3 single cans of store brand).
2. Peanut Butter - (currently have 1 jar opened and 4 jars waiting)
3. Oats - (lifetime supply, compliments of DD)
4. NON-FOOD ITEM: Pet food - 1 (28 lb) bag of dog food open, 2 waiting; similar amount of cat food stashed
5. NON-FOOD ITEM: toilet paper - at least 50 rolls in this house and 3 (12 packs) in the garage. I like to proclaim myself a minimalist - but here my "inner hoarder" comes out.
6. Coffee - 3 containers of ground and 2 jars of instant stashed; 1 container of ground open and in the frige
7. Dried beans - jars and jars and jars. Dried beans for days!!

Not ideal to only have those items - but they are the things I always, ALWAYS have a lot of extras of - I was a major TP hoarder WAY before the pandemic and continue to be.
