Kitty, I am glad to see you cooking and staying busy. I know you have probably seen me post this before, but in case you haven't you can also slice the potatoes up, don't cook them till they get soft, I'd say about 4 minutes then use them to make Potato Au Gratin, a potato casserole, or hash browns.jckitty wrote: ↑Fri Jun 14, 2019 7:30 pm evening update:
Cooked on the grill...first time ever using it. I use real charcoaled wood pieces not briquettes and holy moly was the food ever good. I made 6 burgers, 2 chicken breast and 6 cheddar sausage dogs. I figured if I had the thing going I might as well cook ahead for lunches.
I think next week I will buy a half pork butt roast and smoke/grill it for pulled pork and etc. My mom and dad never grilled, they didn't like the taste but I love it.
I made my ramen noodle salad and seriously think I could founder myself on the stuff, LOl.
So the fridge is stuffed with salads and food. Hopefully sometime this week I can start defrosting and cleaning the deep freezers. I hope to have them done before time to start adding produce.
I also have potatoes that need used up, I used so many feeding my dad and now have too many. I used to make and freeze mashed potatoes "ala LittleMiss" and that worked well, think I will do it again.
Wind is really picking up, better get the rugs off the lines.

I also, dice them and cook about the same length of time for potato salad, just don't put your condiments or dressing in it until you thaw and cook to the texture you like your potatoes when making fresh potato salad. I tried making potato salad and freezing it, but I didn't like the taste or texture. Now that I have my air fryer I am cutting them into french fries, coat them with a little olive oil and flash freeze them after I cook for a couple of minutes. When you remove as many as you want from the bag you can just put the rest right back in the freezer for another time. I love the mashed potato ones and I can take a couple of (muffin frozen mashed potatoes) load it up with cheese, sour cream, green onion and bacon, I can't tell the difference from using a baked potato out of the oven.
Your salad sounds wonderful, would you share the recipe? I love salads in the summertime.
