Sunshine Muffins

These muffins are extremely easy to make and absolutely delicious!

2/3 Cup Orange Juice
1 Cup Raisins
1 Tsp. Orange Zest
2 C. Flour
3/4 C. Sugar
1 1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Large Egg, lightly beaten
5 Tablespoons Butter, melted and cooled slightly (I USED MARGARINE)

Pour orange juice (I USED PINEAPPLE) into a small bowl and add zest (I omitted the zest) and raisins - set aside.

Combine flour, sugar, baking powder, baking soda in mixing bowl. Add 1 large egg, lightly beaten and 5 tbsp. of melted and cooled butter. Add juice & raisins. Stir until all ingredients are just combined.

Topping: combine 1/4 cup sugar, 1/4 cup flour and 2 tbsp. butter. Sprinkle over muffins before baking. Bake in muffin tin sprayed with cooking spray, with cups filled 3/4 of the way -- 350 degrees for 25 minutes.

Wolf, it came out of a booklet I got in the mail from Sun Maid Raisins. I should have said that in the first place. That is exactly what I was looking for - a way to use up the last bit of pineapple juice.

I made these a few days ago and they were awesome!! Thanks so much for posting.

I goofed on the recipe and they still came out great! :lol:

I did all the steps up until the part about the topping. The batter was looking very..cookie batter. So I just added more orange juice until it turned more into what I thought a muffin batter should look like.

Still was a hit!!

Glad you enjoyed them, Delighted! I think the recipe is very forgiving - you can change it around, add to, take away, etc. I'm hungry now, lol.

Thank you for this recipe, sometimes I want to bake using " plain " on hand ingredients and this is very good. We store a lot of dried fruit and sometimes raisins are VERY DULL ;)

It sounds like a lovely breakfast muffin x
