Ham, Egg and Cheese Croissant

These freezer breakfast croissants are perfect for busy weekday mornings, or when you need to feed a houseful of guests. Just pull out as many as you need; heat them up in the microwave or oven; and you’ll have breakfast on the table in as little as two minutes.

I’ve written this recipe for eight servings, but it’s just as easy to make 16 or 24, or however many you need.

Ingredients:

8 croissants
8 large eggs
8 slices cheddar cheese
1/2 lb thin-sliced ham

Tip: Check the reduced-price rack for croissants. I often find them there. When I do, I make a batch of these for the freezer.

What You Do:

Cooked Egg

Crack four eggs into a greased frying pan. Beat; then, cook them like you would an omelet. Repeat with the other four eggs.

Cut the eggs into quarters.

Then, slice the croissants in half to create the tops and bottoms for your sandwiches.

Place an egg on each croissant.

Wrap each croissant sandwich individually in plastic wrap.

Then, place them on a baking sheet, and freeze.

To serve:

Remove the plastic wrap. Then, wrap a sandwich in a paper towel, and microwave it for one to two minutes, or until the center is cooked through. Two minutes is perfect in my microwave. If you’d like to heat up several sandwiches at once, arrange them on a baking sheet, and bake them at 375 degrees for 20 minutes.

Want to enjoy these, without freezing them first? Bake them at 375 degrees for 10 minutes.

Recipe Variations:

Use cooked sausage or bacon, in place of the ham.

Ingredients

Instructions

Beat four eggs. Then, pour them into a greased frying pan, and cook them, like an omelet. Repeat with the other four eggs.

Cut the croissants in half horizontally to create the top and bottom for your sandwiches.

Layer the croissants with egg, cheese and ham.

Then, wrap each sandwich separately in plastic wrap, and freeze.

To serve: Remove the plastic wrap. Then, wrap the sandwich in a paper towel, and microwave for one to two minutes, or until the entire sandwich is heated through. To heat multiple sandwiches at once, place them on a baking sheet, and bake at 375 degrees for 20 minutes.

To enjoy without freezing first, simply bake the sandwiches at 375 degrees for 10 minutes.

Notes

These make-ahead breakfast croissants are ideal for holiday mornings, or anytime you have house guests. Just heat them up, and they’re ready to serve.
