Ingredients:

  • 2 cups oats
  • 1 cup shredded coconut
  • 1 cup nuts (almonds, pecans, etc.)
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 2 cups dried fruit (raisins, cranberries, chopped apricots, etc.)

Instructions:

Combine the oats, coconut and nuts in a bowl.

In a second bowl, whisk the honey and vegetable oil together.

Pour the honey-oil mixture over the dry mixture. Stir well to coat evenly.

Spread the mixture out on a cookie sheet, and bake at 325 degrees for 40 minutes. Stir every 10-15 minutes to prevent burning.

Stir in the fruit, and allow your granola to cool. Store in an air-tight container to keep it fresh.
