Just add water and coconut milk to this lentil soup mix, and you have dinner for four in under 30 minutes. It’s the perfect thing to keep in your pantry for busy nights, and makes a thoughtful gift. Tie one of the free, printable tags, around a jar of the soup mix, and it’s ready to give.
One jar of mix makes six cup servings or four (1-1/2 cup) bowl servings. It contains red lentils, dried chopped onion, curry powder, garlic powder, cumin, paprika and bouillon, all neatly layered in a pint jar. It makes a delicious coconut curry lentil soup, and can easily be bulked out with vegetables.
Toss in some chopped carrots, potatoes, sweet potatoes or spinach to add more color, flavors and servings.
Lentil Soup Mix Recipe
This soup mix fits in a pint jar. It makes six cups, or four (1-1/2 cup) bowls of lentil soup.
Ingredients:
Dry Soup Mix:
- 1-1/2 cups red lentils
- 3 Tbsp dried chopped onion
- 1 Tbsp vegetable bouillon powder (or 3 vegetable bouillon cubes)
- 2 tsp curry powder
- 2 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
Prepared Soup
- 6 cups water
- 1 cup coconut milk
- Chopped vegetables – carrots, potato, sweet potato, spinach, etc. (optional)
Making your own soup mix gives you an opportunity to do things better than store-bought. Keep all the sodium and preservatives out of your soup by opting for a bouillon that contains no-msg and little to no sodium.
What You Do:
Pour half the lentils in a pint jar. Add layers of onion, bouillon powder* and spices. Top with the other half of the lentils.
*If you’re using bouillon cubes, add them last, so they’ll be at the top of the jar.

How to Use This Red Lentil Soup Mix
In a large pot, combine the lentil soup mix with 6 cups water. Add any vegetables you’d like – chopped carrots, potatoes, sweet potatoes, spinach, etc. Bring the pot to a boil; then, reduce heat, and simmer 20 minutes, or until lentils and veggies are soft. Stir in 1 cup coconut milk, and serve.

Instructions
To Make Lentil Soup Mix:
Pour half the lentils into a pint jar. Layer in the spices, onion and bouillon*. Top off with the remaining lentils. Seal jar, and store in the pantry.
*If you’re using bouillon cubes, add them last, so they’ll be at the top of the jar.
To Make Lentil Soup:
Combine 6 cups of water and lentil soup mix in a large pot. Add any chopped veggies you’d like (a potato, spinach, carrots, etc.). Bring to a boil over high heat; then, reduce temperature, and simmer for 20 minutes, or until lentils are soft. Stir in one cup of coconut milk, and serve.
Makes 6-1/2 cups of soup, enough for 6 cups or 4 bowls.
