Mug Cake Recipe

Make a single-serve cake in the microwave in just over a minute. This recipe is moist and flavorful, just like an oven-baked cake.

Ingredients

Scale
  • 4 Tbsp of MyFrugalHome Cake Mix: yellow, chocolate or spice cake (see website for recipes)
  • 2 Tbsp milk
  • 1 Tbsp butter
  • 11/2 tsp unsweetened applesauce or cooking oil

Instructions

Melt a Tablespoon of butter in the bottom of your mug.

Spray the inside of the mug with cooking spray, so it’ll be easy to wash later.

Add the cake mix and other ingredients to the mug, and mix with a fork. Only mix long enough to bring all the ingredients together.

Microwave your mug cake. One minute and 30 seconds is perfect in my 1000-watt microwave, but you may need to experiment a bit to determine the perfect time for your microwave. If you have a higher-wattage microwave, start with one minute, and adjust up as needed.

Enjoy your cake plain, or frost it.

Notes

  • Be careful not to cook your cake too long, this will result in a cake that is dense and spongy. A lot of mug cake recipes say to cook your cake until the edges brown and an inserted toothpick comes out clean. These tests work well for a cake that you’ve baked in the oven, but they don’t apply to a cake that you’ve made in the microwave. Since this cake is egg-free, you don’t have to worry about eating a cake that is under-baked. So, go ahead and give it a taste test, even if you aren’t sure that it’s done.
