Pimento Cheese Recipe

Pimento cheese is too good to be just a southern thing. If you’ve never had it before (or you’ve only had a grocery store knock off), this is your chance to treat your taste buds to something truly special. While most grocery store pimento cheese has a smooth, spreadable consistency, this recipe makes a slightly chunkier spread. It’s what you’d expect to be served, if you ordered a pimento cheese sandwich at a really good deli. And it’s the only way I serve it at my house.
Pimento Cheese Recipe
Ingredients:
16 oz. sharp cheddar (2 bags)
1 cup mayo
4 oz. diced pimentos, drained
1 tsp. Worcestershire sauce
1/2 tsp. onion powder
1/8 tsp. cayenne pepper
black pepper to taste
What You Do:
Combine all of the ingredients in a large bowl.
Then, transfer to a food processor and pulse, until you reach your desired consistency. I like to leave mine a little bit chunky.
If you have time, chill your pimento cheese before you serve it. This will give the flavors a chance to meld. But honestly, it’s good right away, too.
To Serve:
Spread it on bread for a pimento cheese sandwich, or use it to top crackers. For a real treat, try a grilled pimento cheese sandwich. Bonus points, if you add bacon.
For a Low-Fat Version:
Substitute plain yogurt for half of the mayo.
I like to put a couple homemade sweet pickles on top of my pimento cheese sandwich. It adds just the right touch of sweetness and crunch.

Homemade Pimento Cheese

Ingredients
