Potato Soup Mix Recipe

This potato soup mix is handy to keep in the pantry for a quick meal, and makes a great gift. Just add hot water to make a cup, bowl or pot of potato soup in minutes. The reconstitution instructions are included on the printable tags.

One jar of mix makes six cups, or four (1-1/2 cup) bowls of soup. This soup mix has been sized to fit in a quart jar. It contains enough servings to make six cups, or four (1-1/2 cup) bowls of potato soup.

Ingredients:

To keep the junk out of your potato soup mix, choose instant potato flakes, where potato is the only listed ingredient, and opt for a no or low-sodium, no-msg bouillon. I used Bob’s Red Mill Potato Flakes Instant Mashed Potatoes in my mix.

Mix ingredients together in a large bowl. Then, transfer to a quart jar.

How to Use Potato Soup Mix

Making potato soup from this mix is a cinch. Just decide how much you want to make. Then, follow the instructions below:

To Make 1 Cup: Combine 2/3 cup mix + 1 cup boiling water

To Make 1 Bowl: Combine 1 cup mix + 1-1/2 cups boiling water

To Make 1 Pot: Combine 1 jar of mix + 6 cups boiling water

Stir the soup mix into the water with a fork or whisk (to prevent lumps). Allow the soup to thicken for a few minutes. Then, add any toppings you’d like (shredded cheese, bacon, chives), and enjoy!

Ingredients

Scale
  • 2 cups instant potato flakes
  • 2 cups non-fat dry milk
  • 1 Tbsp chicken or vegetable bouillon powder (or 3 bouillon cubes)
  • 2 tsp dried chopped onions
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1/4 tsp ground black pepper

Instructions

To Make Potato Soup Mix:

Mix ingredients together. Store in a quart jar.

Makes 6 cups, or 4 (1-1/2 cup) bowls of soup.

To Make Potato Soup:

1 Cup: 2/3 cup mix + 1 cup boiling water

1 Bowl: 1 cup mix + 1-1/2 cups boiling water

1 Pot: 1 jar of mix + 6 cups boiling water

Stir mix into water with a fork or whisk (to break up any lumps). Allow soup to thicken for a few minutes. Then, add any toppings you want (cheese, bacon, green onions, etc.), and serve.

 

 

Notes

  • Use low or no-sodium bouillon for a nutritious meal.
