Three-Ingredient Pumpkin Muffins

These moist and flavorful pumpkin muffins require just three ingredients and 20 minutes of oven time, which is a good thing, given how fast these get gobbled up at my house. I’ve been making these muffins for years, and they’re one of my family’s all-time favorite recipes.
I made a batch of pumpkin muffins to share the recipe with you, and had to hurry to take pictures before they got eaten. Even so, only half of the muffins remained by the time I snapped my pictures. They really are that good.

Three-Ingredient Pumpkin Muffins
Ingredients:
1 spice cake mix, box or homemade Here’s my spice cake mix recipe
1 15 oz. can of pumpkin puree, store-bought or homemade
1 bag of cinnamon baking chips (you can also use chocolate chips or pumpkin spice chips)
You’ll find cinnamon chips on the baking aisle, alongside the chocolate chips. Some stores treat them as a seasonal item, but they’re usually pretty easy to find from early fall through Christmas. I stock up, so I can make this recipe year-round.
What You Do:

Combine the cake mix, pumpkin puree and cinnamon chips in a large bowl.

Keep mixing until the batter comes together. It’ll have a really thick, cookie dough-like consistency.

Spoon the batter into a greased or sprayed muffin pan.

Then, bake in a 350 degree oven for 20-25 minutes, or until a toothpick inserted in the center of one of the muffins comes out clean.
This makes between 14 and 18 pumpkin muffins. It just depends on how big the cups in your muffin pan are, and how high you fill them. The muffins don’t rise a lot, so you can safely fill them to the top, if you want to.

Stir cake mix, pumpkin puree and cinnamon baking chips together in a large bowl, until a batter forms. It’ll be thick, like cookie dough.
Spoon the muffin batter into a greased or sprayed muffin pan, and bake at 350 degrees for 20-25 minutes, or until a toothpick inserted in the muffins comes out clean.
Notes
Chocolate chips or pumpkin spice chips can be used in place of the cinnamon baking chips, if you have trouble finding them.
